The Best Blueberry Pie

Berries are starting to come into season which means it is time to get your pie pans out. Making a delicious pie crust and a delectable filling does not need to be a daunting task. This recipe, after much testing, is the key to creating the most delicious blueberry pie you have ever tasted. Okay, that is a big vote of confidence but we are sure you will enjoy its sugary sweetness.


2 Pie Crusts (homemade or store bought)
6 Cups of Fresh Blueberries
⅔ Cup of Granulated Sugar
¼ Cup of Cornstarch
¼ Teaspoon of Ground Cinnamon
1 Tablespoon of Lemon Juice
1 Tablespoon of Unsalted Butter
1 Large Egg
1 Tablespoon of Milk

We are presuming you already have your pie crust as that is the easy part to make. For the filling, you will need to heat your oven to 400 degrees Fahrenheit. Then, you need to take a large bowl to combine the filling in. Place the blueberries, sugar, cornstarch, cinnamon and lemon juice in a bowl and mix them together.

Then, grab your pie crust. If it is not already in your pie tin you will need to place it inside and mold it to the edges making sure that there is enough of a lip at the top so that none of the fillings can get between the edge of the tin. Now, take the filling and spoon it inside the pie crust. You want to spoon it so that not extra liquid gets inside as this will make it runny and mushy which you do not want. Then, grab the cold butter and cut it into small pieces and place those on top of the filling.

You can now decide what kind of topping you want your pie to have with the remaining crust. It can be latticework which means you need to cut it into strips or you can use a cookie cutter and create stars from the dough. You will need to place your choice on top of the pie. Once this is done whisk the milk and the egg in a small bowl and brush the mixture over the topping of the pie for baking.

Lastly, place the pie in the oven and let it bake for twenty minutes, then turn the heat down to 350 degrees Fahrenheit and let it bake for a further 25 to 30 minutes. Take the pie out of the oven and let it cool for at least three hours as the filling will need to thicken now that it has been cooked. Don’t forget to add a dollop of ice cream when you serve it!
