The Perfect Coconut Dream Bars

With Easter and Passover coming up in the next couple of weeks you may be wondering what you should serve as a nice springtime dessert. These coconut dream bars have all the elements that make them the perfect treat to accompany tea and coffee. They have a scrumptious shortbread layer, followed by a coconut layer, what’s not to love!


Shortbread Layer:
½ cup butter softened to room temperature
1 cup flour
½ cup packed in brown sugar

Coconut Layer:
2 eggs
½ cup packed in brown sugar
¼ cup flour
¼ teaspoon salt
½ teaspoon baking powder
½ cup unsweetened coconut flakes (sweetened will be very sugary if you have a sweet tooth)
1 cup sweetened shredded coconut
1 teaspoon vanilla
1 cup chopped up walnuts


First, you will want to preheat your oven to 350° F and select an 8×8 inch pan which you will then line with parchment that you have slathered in butter. You do not want your bars to stick to the pan when you try to take them out!

Next up, you need to make the shortbread layer so mix all three ingredients (butter, flour, brown sugar) together to form the cookie dough. Then, put the dough in the tin and smooth it out, making sure to press it down into the sides of the tin so it is a uniform level. Use a fork to poke holes in the dough so it does not bubble up when baking. Finally, let the shortbread base bake for 15 minutes, and then remove so you can place the coconut layer on top.

For the coconut layer, you will want to use a stand mixer, or a hand mixer if you do not have one. First, put the two eggs in the bowl and mix on high for about 5 minutes. The eggs should be quite fluffy, but not yet forming peaks. In a smaller bowl, mix the dry ingredients together (flour, salt, baking powder) which you will now add to the eggs along with the remaining shredded and flaked coconut, vanilla, and chopped walnuts.

Finally, pour the newly mixed contents over the shortbread layer and place in the oven to bake for 20 minutes. The top should appear to be slightly brown and then it is finished. Just let it cool and once cooled, slice it into the desired shape and serve!
