Who doesn’t love chocolate chip cookies? This healthy recipe is nutritious and delicious and means you can be a cookie monster without having to worry about your waistline. Simple and requiring minimal ingredients, you can whack these babies out for friends, or simply have a stash waiting for you to have with a cuppa after a long day. Nothing soothes the soul like chocolate does, and what’s more, these are filled with fibre, protein and omega -3 for a healthy heart and gut.
2 cups almond flour
3 tsp flax seeds
¼ tsp baking soda
Pinch sea salt
¼ cup melted coconut oil
¼ cup pure maple syrup
¾ cups cacao nibs or powder
1 tbsp almond butter
Preheat oven to 175 °C and line baking tray with parchment paper, and lightly grease with a bit of coconut oil.
Add the flour, flaxseeds, baking soda and salt in a large bowl. Next combine in the coconut oil and maple syrup and mix well, whilst folding in the chocolate gently to make sure no air bubbles are present.
Scoop a it of mixture, enough for one cookie, and roll into a ball and place on the baking tray. Gently press to flatten it slightly and, continue with the mixture until the tray is lined and the mixture is all used
. Bake for 10-15 minutes until edges are lightly golden.
Place the cookies to a rack and allow to cool. Enjoy warm or cold, with ice cream.
