Finding the perfect summer dessert can be tough, you want it to have seasonal fruit in it, not be too hot, and have a freshness that goes along with the season. That is where this traditional pavlova enters the picture. It possesses everything a summer dessert should have, tons of fresh berries, creamy cool icing, and delicious meringue. It will be like biting into a berry-flavored cloud. Here is what you need to make this delightful confection.
1 ½ Cups of Cold Whipping Cream
2 Tablespoons of Sugar
4-5 Cups of Fresh Berries (Strawberries, Blueberries, and Raspberries)
1-2 Kiwi Fruit (sliced)
6 Egg Whites, Must Be At Room Temperature
1 ½ Cups of Sugar
2 Teaspoons of Cornstarch
½ Tablespoon of Lemon Juice
½ Tablespoon of Vanilla Extract
First, you prepare the pavlova as it will need to bake. Heat your oven to 250 degrees Fahrenheit and grab a baking sheet that you will then line with parchment paper to avoid any sticky situations. Next up, you will want to grab your electric mixer to make the meringue. Pour the 6 egg whites and the 1 ½ cups of sugar into a mixing bowl. Mix everything together on the fastest speed until you start to see white peaks, this means it is done. Now measure in the ½ tablespoon of lemon juice, ½ tablespoon of vanilla and the two teaspoons of cornstarch and let it all mix for 15-30 seconds. You will want to place the whole meringue mixture on the prepared baking sheet and make a round about 10 inches in diameter. You will then need to make a large indent in the middle of the meringue as this will be where the berries and cream will be placed when it is cool. Let it bake for an hour and a half and then turn the oven off and let it cool inside for another hour. Then it can be removed and prepared to be served.
The topping is the easy part. All you need to do is beat the 1 ½ cups of whipping cream with 2 tablespoons of sugar until it forms a nice consistency and is ready to spread on the pavlova. You will want to ice the pavlova with the cream and put a dollop of it in the center of the pavlova and then spread it on the edges. After that, you can then wash the berries and place them in the center of the pavlova in a pleasing design and it is ready to be served. Bon appetit!
