If you want a muffin with that oh so delicious coffee cake flavor then this is the recipe for you. These delectable muffins feature cinnamon spiced chunks of apple, with a brown sugar streusel topping, and a light drizzle of icing. They are the perfect accompaniment to your morning coffee or even a tasty after work treat.
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1/2 cup butter, melted
1-1/4 teaspoons vanilla extract
1-1/2 cups peeled chopped tart apples
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon cold butter
3/4 cup confectioners’ sugar
2 to 3 teaspoons 2% milk
1 teaspoon butter, melted
1/8 teaspoon vanilla extract

First, you will want to grab a good-sized mixing bowl. Then, you will want the oven to begin heating to 375°F as you prepare the muffin filling and the streusel topping. In the mixing bowl combine the dry ingredients (flour, sugar, baking soda, baking powder, and salt). In a separate smaller bowl combine the wet ingredients for the filling (eggs, butter, and vanilla).
You will want to make sure the eggs are well mixed with the butter and vanilla before you pour that mixture in with the dry ingredients. Make sure the batter is just combined and there is no loose flour, you do not want to overmix it though as this will make your muffins lose their fluffy texture when they bake. Once everything is just mixed together, add the apples in and fold the batter over them until everything is combined.
In another bowl, you will need to mix together the streusel topping. It will be quite crumbly as the butter will be cold so just use your fingers to get it all combined to the consistency you like.
Finally, grab some muffin cups in a cute pattern or use butter to grease a 12-muffin tin. You will want to scoop the batter in until each muffin cup is about ¾ full. Now, take the streusel mixture and sprinkle it on top of the muffins. You may want to press it in a bit on the top as the sugar will melt while baking and make it very flavorful.
Let the muffins bake for around 15 to 20 minutes or until you insert a toothpick and it comes out clean signifying that they are cooked through. The muffins should cool for about 5 to 10 minutes and have the icing drizzled over them while they are still warm. Bon appetit!
