Absolutely Amazing Avocado Chicken Salad

Salad can be boring but if you mix it up with some tasty ingredients you can turn it from boring to delicious in a matter of minutes. No boring romaine lettuce and croutons in this one, instead you have the tantalizing flavors of avocado, shredded chicken and a bit of a tex-mex flavor with some corn added in. This is the perfect salad to serve for a spring lunch or even to be eaten as a dinner main.


2 Cooked Chicken Breasts (poached for juiciness)
2 Ripe Avocados
½ Cup of Corn
¼ Cup of Red Onion
2 Tablespoons of Cilantro (Dill or Parsley can be substituted)
2 Tablespoons Lime or Lemon Juice
2 Tablespoons Olive Oil
A Pinch of Salt and Pepper

First, if you do not want to cook chicken breast you can purchase a rotisserie chicken from the supermarket and shred it so that you achieve the required amount of protein. Second, you will want to pit the avocados and then dice them. Third, you will want to mince the onion and the cilantro or another herb of your choice. Some people find that cilantro has a soap-like taste so be sure to check with your family or guests if they like it or not and plan accordingly. Fourth, you can decide to use canned, roasted or defrosted corn in the salad. We find that roasted corn is the best as it gives it a bit of a crunchy component which is a nice mix of texture when paired with the softness of the avocado.

Once all of the ingredients are minced and prepared they can be combined together in a large bowl and set aside. It is time to prepare the salad dressing. In a small bowl or cup take the olive oil, lemon or lime juice, and the salt and pepper and whisk it together. Once you feel that it has a flavor you like, you may want to add a bit of cayenne pepper to give it a bite, you can drizzle it over the salad. And voila the salad is complete.

If you still feel that it is lacking you can add all sorts of extras to give it some added oomph! Candied pecans are always a hit. You can purchase these or simply make them yourself. All you need are pecans and maple syrup and you can fry them up in a pan until the pecans are coated. Then chop them up and sprinkle them on top. This will be a crowd pleaser for sure!
