Easter Edition: Carrot Cake

Carrot cake has long been an Easter favorite. It contains carrots which bunnies love and we know the Easter bunny is supposed to be hopping around right about now so it makes sense he would like a good carrot flavored cake. But, fun fact, carrot cake was actually invented because sugar was hard to come by in the Middle Ages and carrots have naturally high sugar content. Here is what you need to make the perfect one for any occasion.


6 cups grated sugar
1 cup brown sugar
1 cup raisins
4 eggs
1 ½ cups white sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 cup drained and crushed pineapple
3 cup all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon salt
4 teaspoons ground cinnamon
1 cup chopped walnuts

Easter Edition: Carrot Cake

First up, you need to peel and grate carrots until you have around six cups. Then, add the brown sugar and let the two sit for an hour together, once an hour has passed add the raisins to the mixture.

Now your oven is ready to be preheated to 350°F and you can grease two 10-inch cake pans with butter and flour them to avoid the cakes from sticking at the end.

Next up, you need to grab a large mixing bowl and crack the eggs into them and beat them until they are a light yellow color. Now you can mix in the white sugar, oil, and vanilla and then stir in the pineapple until all of the wet ingredients are combined. Then, it is time to add the dry ingredients (flour, baking soda, salt, and cinnamon). Both the wet and dry ingredients will need to be mixed together in the same bowl. Last up, stir in the carrot, brown sugar and raisin mixture until it is all combined into a batter.

Finally, pour the batter into the greased cake pans evenly and place in the oven to bake for around 45-50 minutes or until a toothpick comes out clean. Let them cool for about ten to fifteen minutes and ice them with a cream cheese icing of your choice. As with any homemade cake, homemade icing is the way to go so make sure you choose one that has cream cheese in it and do not forget to dye some orange and green so you can add some icing carrots to your confection!
