Ingredients
• 4 cups rolled oats
• 1 cup pecan nuts, unsalted (you can also use cashews or any nut of your choice)
• 1 cup sunflower seeds or flax depending on your preference
• ½ teaspoon table salt
• 1 cup of organic honey
• ½ teaspoon ground cinnamon
• ½ cup melted coconut oil
• 1 teaspoon vanilla extract
• ⅔ cup dried berries or raisins
• ½ cup dried goji berries
• 1/2 coconut flakes

Directions
1. Preheat oven to 350 degrees F or 180 degrees C
2. Take a large baking tray and line with wax paper
3. In a large mixing bowl, combine the oats, nuts, seeds, flakes. Do not add the dried berries or fruit yet.
4. Stir in the salt and cinnamon.
5. Next, add the honey, oil, and extract and stir gently, making sure to coat everything in the bowl with the honey/oil mixture. Tip: if it’s a cold day, you may want to heat the runny slightly to give it a better consistency for mixing.
6. Place the granola in the pan, making sure to spread it in an even layer. If you prefer clumpy granola, then make sure to pack the granola tightly so that the oats will stick together.
7. Place the pan in the oven and come back after 25 minutes to stir the granola so that it bakes evenly.
8. Bake until lightly golden for approximately 25 minutes. Try not to overcook as the granola will continue to crisp as it cools down.
9. Remove the tray from the oven and let the granola cool
10. Once the granola has cooled down completely, transfer it to a large bowl, and add the dried berries.
11. Place in an airtight container and enjoy it at your convenience. Your granola can be stored for up to 2 weeks in an airtight container.
