The Quintessential Quiche

Quiche is one of the easiest lunch or dinner items to make, and it is always sure to impress when you pull one or two of these out for any event. People love their cheesy vegetable goodness and quite often you have all the ingredients you need to quickly whip one up in your kitchen as the filling does not need to be fancy!

If you are pressed for time you can buy pie a quiche shell, or quickly make one with this pat in pan recipe. That’s right, all you need to do is combine these ingredients in a pie dish and your crust is good to go.

Quiche Crust – Ingredients:

1 ½ cups flour
3 tablespoons flour
1 ½ teaspoons sugar
½ teaspoon salt
½ cup vegetable oil
3 tablespoons cold milk

Combine the dry ingredients in the quiche pan, then in a separate bowl mix the wet ingredients together. Next, pour the wet ingredients over the dry mixture in the pan and mix together with your hands, press the dough into the shape of the pan and it is ready for the quiche filling. If you want to blind bake the crust, then make sure the bottom has pie weights in it to prevent it from rising. The oven should be heated to 350°F and only baked for around 10 minutes, or until it is lightly browned. This type does not have to be blindly baked though, store-bought crusts do tend to need this.

Filling – Ingredients:

1 cup grated cheese of your choice (cheddar, gruyere, mozzarella)
1 – 2 cups of veggies of your choice (steamed broccoli, sauteed onions or bell pepper)
OR
1 cup of cooked bacon or ham
3 eggs
1 cup milk
½ cup heavy cream
2 teaspoons salt
A pinch of paprika

Method:

First, you need to preheat your oven to 350°F. Then, if your quiche shell is ready to go place the grated cheese on the bottom to seal the crust and keep it crisp, followed by the filling of your choice it can be simply vegetables or a mix such as onions and bacon for a classic Quiche Lorraine.

Second, whisk the eggs, milk, cream, and salt together to form the custard. Pour this over the top of your quiche making sure that none pours down the sides of the pan which will make the edges soggy. If you want to make your quiche spicy you can whisk in some sriracha but be wary as this will be HOT.

Lastly, you can sprinkle the paprika over the top of your quiche with your fingers or sift it over to give it a slightly smoky flavor. Bake it for 30-35 minutes or until it is firm and not watery inside. Let it cool for 5-10 minutes then slice and serve.
