Creamy Chia Pudding

Ingredients:

6 Tablespoons chia seeds
2 cups unsweetened coconut, almond or cashew milk
1/2 teaspoon vanilla extract
1 Tablespoon maple syrup, honey or sweetener of choice
handful blueberries and strawberries, for topping

Method:

In a bowl, mix together chia seeds, milk, maple syrup and vanilla. Once the chia pudding mixture is well combined, let it sit for 5 minutes, cover and put the mixture in the fridge to set for 1-2 hours, or even overnight. When ready to serve, top the pudding with berries and enjoy.

Oatmeal Of Dreams

Ingredients:

1/2 cup rolled oats
1 cup milk of choice
1/4 cup water
1 large banana, mashed
optional 1/4 tsp cinnamon
1tbsp almond/peanut butter
optional crushed walnuts, shredded coconut

Method:

Combine all ingredients in a small pot. Bring to a boil over medium heat. Once boiling, stir only occasionally to prevent sticking or boiling over.  Sweeten if desired. Pour into a bowl, and add your favorite toppings.

Acaii Delight

Ingredients:

1 small banana
4 tbsp Acaii berry powder
1/2 cup frozen strawberries
1/2 cup frozen blueberries
1/2 cup unsweetened vanilla almond milk
blueberries
raspberries
1 kiwi
1 tsp hemp seeds
Sweetner of choice
handful granola

Method:
In a blender, add banana, acai pulp, strawberries, blueberries and a splash of milk.
Add toppings: Pour acai purée into a bowl and arrange toppings.
Sprinkle with granola and drizzle with honey (if using).
