Rosh Hashanah is just a few days away, and as many prepare to celebrate the Jewish New Year, the holidays provide time for enjoyment with friends and family, and of course over indulging. It is customary to eat apples dipped in honey during this festival to commemorate a sweet new year ahead, so what better way to celebrate, than with an apple and honey dessert.
This gluten-free honey and apple cake hits every spot. Deliciously gooey and soft, it is ideal for entertaining, and is the perfect way to bring in a sweet new year, plus it’s waistline friendly.
2 ½ cups almond flour
1 teaspoon gluten-free baking powder
2 apples peeled and grated
¾ cup of honey
1 teaspoon ground cinnamon
¼ teaspoon allspice
¼ teaspoon nutmeg
Pinch of sea salt
1 teaspoon vanilla extract
2 tablespoons coconut oil (or apple sauce)
Pre-heat your oven to (180 degrees C or 350 degrees F) and grease and line your baking tin of choice.
Mix the dry ingredients together (almond flour, baking powder, spices, salt) in a bowl.
In a food processor (or by hand) place the apple with the coconut oil, vanilla, honey and eggs until nicely mixed. Next, add the dry ingredients and combine well.
Pour mixture into your cake tin and garnish with finely sliced apple and a sprinkle of cinnamon.
Bake for 35 – 40 minutes.
Serve with vanilla ice cream.
