Delicious Dulce De Leche Cupcakes

If you are a fan of caramel then undoubtedly you have had many a dulce de leche flavored treat from ice cream, to mousse, to cake. Finding the right mix of cake and dulce de leche is no easy feat, as you do not want the sugary taste of the caramel to overpower the cake itself. After lots of tinkering, this is the perfect dulce de leche cupcake recipe.

Ingredients:

Cupcakes
1 ½ cups of all-purpose flour
½ teaspoon of salt
¾ teaspoon of baking powder
1 cup of brown sugar
½ cup of white sugar
½ cup of butter (softened)
2 eggs
1 teaspoon of vanilla
½ cup of whole milk

Icing
½ cup of butter
3 cups of powdered sugar
¼ teaspoon of salt
⅔ cup of dulce de leche
2 to 4 tablespoons of heavy cream

Method:

First, you will need to turn your oven on and heat it to 350 degrees Fahrenheit and grease or line a 12-cup muffin tin in preparation for baking the cupcakes.

Second, grab a medium sized mixing bowl. Pour in the dry ingredients (flour, salt, and baking powder). Using a whisk or a fork combine all of the dry ingredients until they are well-mixed. Then, in another bowl, this one should be larger than the dry ingredient bowl, you will begin mixing the wet ingredients. Put the softened butter and the brown and white sugar in the bowl. Select your electric mixture and beat the sugar and the butter together until it is smooth. Then you must add the eggs and the vanilla until everything is well-mixed. Set aside the mixer as it is now time to combine the wet and dry ingredients all together. Pour the flour mixture into the wet mixture. Do not use the electric mixture. Instead, use a wooden spoon or a spatula to combine everything until it is ‘just’ mixed together. You do not want to overmix as this will make your cupcakes quite tough when you would rather have soft ones.

Third, now the cupcake batter is ready. You will want to scoop it into the muffin tin until each cup is about halfway full. Set your timer for 20 minutes, and then use a toothpick or fork to see if they are cooked all the way through. The toothpick should come out clean, if it does not bake them for another three minutes and check again. Allow them to cool for at least 20 minutes before you ice them.

Lastly, you need to make the dulce de leche flavored icing. Simple using your electric mixer to combine all of the ingredients until the desired consistency is met and then ice the cupcakes. Any dulce de leche that is left over can be drizzled on top for added decoration.
