The Healthiest No Bake Breakfast Brownies That Will Make Your Monday

Your morning just got a whole lot better with this recipe right here. Who said you can’t have chocolate for breakfast? These healthy, raw, gluten free, paleo and vegan-friendly brownies are pumped with protein for a healthy fix and will satisfy that sweet tooth without the consequences or hidden nasties.

Recipe: (Serves 4)

For the brownies:
1/2 cup cacao powder
1/2 cup coconut flour
1/2 raw hemp powder (optional)
1/2 cup nut butter of choice (we prefer almond butter or peanut butter)
3/4 cup pure maple syrup (or use honey or agave as an alternative)
1/2 cup mashed sweet potato

For the fudgy gooey frosting:
1/2 cup cacao powder
1/4 cup coconut oil
3 tablespoons maple syrup
Protein powder (optional)
pinch vanilla extract



For the brownies:

Peel and then boil the sweet potatoes until soft, and then mash up in a bowl.
Line a baking tray with baking paper.
In a large mixing bowl, add your coconut flour, cacao powder and set aside.
In a glass bowl melt your nut butter with your maple syrup over heat until all combined.
Add the wet mixture to the dry mixture and mix until fully mixed together.
Stir through the mashed sweet potato until the batter is creamy and even.
Pour batter into the lined baking dish and refrigerate for at least 30 minutes to firm up.

While brownies are chilling in the fridge, make your fudgy frosting and enjoy licking the bowl clean.

For the frosting:

Combine all the ingredients in a bowl and mix until fully combined and thick.
Take the brownies out of the fridge and pour the batter all over evenly and smoothly.
Cut up into squares. Lightly sprinkle sea salt over the top (optional).
Pop back in the fridge for later (if you can).
